Beer Bread | 4 Simple Ingredients


We are already a week into September, like whaaaatt?! With September comes football and tailgating and fall and happiness! Isn’t it great how September starts with a 3-day holiday weekend? And what a great long weekend it was! To start off my weekend, I ended up winning a giveaway from Fit Chick Next Door that I'm pretty excited about AND scored free tickets to the Rangers baseball game Friday night. The seats came with all you can eat food and drinks, which was perfect since the game ended up being one of the longest running 9 inning games in MLB history at 4 hours and 34 minutes. It was crazy long so plenty of snacks were enjoyed!

Hello September | New Month, New Goals


Yay September! We can finally start to pretend it's fall! I have to say pretend because I'm in Texas and fall is very short here! It has been cooler here with all the terrible weather hitting Houston (donate to help those in need here), which has made it feel a little more like fall. I think that September is one of favorite months in general, I just love this time of year! I'm even more excited about this month because today started the beginning of a wonderful "healthy living" accountability group with some fellow bloggers. I really love the community of bloggers that I have met so far! Let's see how I did on my August goals and set up some new ones for this month - or maybe repeat a few if I failed them in August haha.

A Love for a Puppy: Holly

UPDATE APRIL 2019: Sweet Holly crossed the rainbow bridge April 6, 2019.

You made it to Friday, that deserves a congrats and pat on the back my friends! Today is going to be a little sweet but sad touchy feely post so carry on about your day if you don't want that in your life right now. Just the thought of writing this post got me emotional and teary eyed. I just dropped my first fur baby off at the vet to *hopefully* get all her cancer removed. I wanted to share a little background on how she ended up in my life and some pictures from over the years. Please forgive the pics as it's not like I had a fancy camera or "camera phone", as they were referred to as back in the day you youngsters, when some of these pictures were taken. But then again, that's what pictures are for, to relive memories, good or bad.


Sweet little Holly was born sometime in October 2008. We celebrate October 1st as her birthday though. The mother of my boyfriend at the time was driving back from Christmas shopping when she noticed someone was giving away puppies from a box in a parking lot. She stopped knowing that I had recently lost my childhood dog and picked out the runt of the litter. I was at her house watching a movie with their family when she gave this sweet faced little pup to me as an early Christmas gift. Since it was Christmas time, Holly seemed a very fitting name. I still use Holly Berry as her nickname.

5 Amazing Instagram Accounts to Obsess Over

This is such a busy week for me! I am traveling to far North Oklahoma for my mother's retirement party, we are planning on visiting The Pioneer Woman Ree Drummond's Mercantile while I am in town, and my dog is having surgery to remove her cancer on Friday (fingers crossed!). Before I leave town, I have 4 years worth of laundry to do, fit in some Orange Theory workouts, and pack up everyone for the 6 hour car ride! If that doesn't sound like fun, I don't know what does? Ha!

Zella Leggings: Worth the Splurge?

We finally made it, it's Friday! I am happy to say that my August goals are going really well so far with the exception of Starbucks - hah but I'm trying so that has to count for something! During the Nordstrom Sale last month, I picked up some new leggings to try out - Zella Live In High Waisted Leggings. I had heard great things about them in regards to their comfort and quality of fabric. I first got them in this burgundy color and after I tried them on, I quickly ordered them in black as well. So now here I am after just one week of wearing them and I am OBSESSED!


I started going to Orange Theory Fitness last week and I thought this would be the perfect time, or rather place, to test these bad boys out. If you haven't been to Orange Theory, then let me give you a little rundown of what the classes entail. The general idea behind Orange Theory is to keep your heart rate in the orange zone, or 85-90% of your maximum heart rate, in order to continue burning calories for up to 36 hours following exercise. The 1 hour class itself consists of interval training with treadmills, rowing machines, and weights. It is very fast paced but it feels more like working out with a trainer than it does a regular fitness class you may find at a typical gym. You can try a class for free if there is one near you and highly recommend it if so!

Thankful for Mom on Her Birthday

Happy hump day my friends! Today is a very special hump day being that it is my beautiful mother's birthday and the winner of the $75 giveaway is announced! There are so many horrible events happening in the world today and it really makes me glad that I grew up in the times that I did. This was a wonderful time when social media didn’t run the universe, on how I miss those days. Since it is my mother’s birthday, I thought I would write a little about her and thank her for everything she has done for me.


My mother grew up in a very small Oklahoma town that had a school so small her graduating class was 5 people! She worked very hard and put herself through college. At 19, she took her first and ONLY job in the oil industry. She will retire from there next week and will move several hours closer to me in the next few months to their new Ranch home on a couple hundred acres. I’m excited to have both of my parents so much closer to me in the future as we currently live 6 hours apart.

Growing up, I thought my mother was the meanest mom ever. I think everyone feels that way about their parents when they are teenagers though. When I say she was mean, I'm referring to the times that she refused to buy the $100 pair of jeans from [insert your favorite high end store here] and instead buying me the $20 pair from not there. I really thought it was the end of the world at 16. Looking back, she was honestly being the best mom ever. She taught me that just because I wanted something didn't mean that I needed it. To this day, I always ask myself that when making a purchase. Do I want this or do I need this? This was just a small instance of how she taught me about responsibility. Thank you mom.

Every Day Beauty Essentials + $75 Giveaway!


Happy Thursday my fearless readers! August always seems like such a busy month. I'm not in school anymore but I can only imagine what it's like for those that are or who have little ones headed back to school. Today, I'm sharing the 5 makeup products I can't go a day without. These five products make my entire face every single day! They are also perfect to have on hand when I'm running late because they are in my purse ready to brew some magic in the car (this happens more often than not). Don't get me wrong, I LOVE a good highlight and contour but I do not have the time, and some days the energy, to do all that at 6 in the morning! If this were a post on the essentials for date night or girl's night out, this would be a much longer list because I go full out when I get the opportunity.

These essentials are coming from a non-pro, every day, work grind girl. I know the majority of women are exactly that so I hope many of you can relate to this and it helps get you through those hectic days! August Goals: Accountability Starts Now!

I know we are already a week into August but I see so many other bloggers post about their goals for the month, not only blog related but personal too! I love the idea behind it because it really focuses what needs to happen. I'm a very task and goal-oriented person so I think this is going to be quite helpful for me! I could always use more accountability in my life so here I am, jumping on that blogger bandwagon! I think my goal for my goals (haha) will be to have 3 goals each related to blog and my personal life. 


BLOG GOALS:

1) Put myself/blog out there more. I really want to up my game and get involved more with other bloggers and my readers. I teamed up with 2 of my blogger IRL gal pals (Sassy Southern Lindsey and The Cocooners) to do a giveaway (check back Thursday for the details), which is something I've never done before. I wanted to do this to really get my blog some visibility it hasn't had before and, quite frankly, I'm a little scared of! I also want to get involved with at least 1 campaign this month. I've been leary to do so because I really want to do brands that partner with me proud which means incorporating more time to commit to posts. I am ready to knock this one out of the park!

Roman Holiday - My Italy Study Abroad



I'm not going to lie to you, I really just wanted to upload 100 pictures, say "hi", and call it a post but I figured I should at least say a little something :) This was good enough right? Ha, okay fine. Brief overview: I studied abroad in Italy my freshman year of college. I was in a Leadership scholarship program that did different study abroad programs each year. The semester before I went to Italy, I took an "overview" class of Italy that included learning the language, culture, and general travel tips. When the time for travel came, I flew into Frankfurt, Germany and from there took a short flight into Rome and so began my journey. I honestly could write a novel of my experience but I thought doing a look into my favorite things/places would probably be the most beneficial.

Royal Obsession: Blue & Gold Details

Wow, Friday already?! This was such a busy week for me! I wasn’t sure if I was even going to have the time to crank something out for the blog. Work has been crazy hectic and I’m still house hunting like crazy. The housing market in North Dallas is such a nightmare.  Since so many people are moving here from Cali, where the prices are outrageous, you have to be ready to pay asking price or higher within 24 hours of a house going on the market. This is at least the case for the new homes or neighborhoods that I’ve been looking into. I just keep trucking on and will hopefully find something before the year is up! Fingers crossed.


Today I’m stepping a little out of my comfort zone. This is just a “hey, look I have cute clothes on” post, haha, or more like a style feature. I really just wanted a chance to show off these super cute shoes because I'm in love with them! I don’t really like having pictures taken of me so this was a little different. I’m going to try to do more and more because I want this blogging journey to be an outlet for creative and pushing me to do new things! Two main staples for me, regardless of season, are blue and gold. It really doesn’t matter what shade of blue, I love it! And I honestly used to despise yellow gold but it is really making its way into my heart lately! I think that means I'm getting older *sigh*

One of my favorite scarves that I somehow missed when I made my purchase last week is now sold out but you better believe that it is still on my wish list and I have my fingers crossed that it will get restocked! (EDIT: It's restocked & on it's way to me!)

Best Dessert You'll Ever Have: Nutella Raspberry Cheesecake Dip

As I was telling you last week, we (The Cocooners & I) had our Real Housewives of Orange County watch party and made some delicious treats! The recipe that I’m sharing with you today is so yummy and will be my new go to dessert for parties or family gatherings. For this recipe, I used Nutella as the base flavor and although I chose to add raspberry preserves, you could really add any fruit or nut to make a delicious combo! Cheesecake dips are everywhere and now that I’ve made one, I can see why!


If you read last week’s post you know that I made a savory dish (Cheddar Bacon Ranch Pull Apart Bread) and a sweet dish, this recipe. I typically gather my inspiration from Pinterest as it is now the Google of the recipe world! As I scrolled through there were so many variations for cheesecake dips, and I thought it would be something good to try since I have never even made a cheesecake. I didn’t want this recipe to be a cumbersome recipe with lots of ingredients so I tried to keep it as simple as possible. Voila, 4 ingredients plus a topping or mix in and you don’t have to bake or chill anything! This recipe also made a good amount but there still won’t be leftovers (it’s that good!) I don’t want to delay this recipe any longer because my mouth is watering as I type this out, mmmmmm.

Nordstrom Anniversary Sale Newbie: Early Access + Giveaway!

Happy Friyay!

I am jumping on the "Yay!  Nordstrom Anniversary Sale" bandwagon. I wasn't planning on it but I thought, oh why not! I shopped round 1 of the sale last night and stuck to my budget pretty well. Although with that being said, I still have a few items sitting in my cart until public access starts next Friday, or until I win one of the many gift card  giveaways that are out there right now including this one over on  The Cocooners! My thought is that if it is still there by the time it opens to the public, then it was meant to be and I have to have it! 

I wanted to give a quick look at some of the great finds that you can get so far! Remember that some of these items may sell out before public access starts but I will keep this post updated if that does happen to any of my items. If you are waiting until public access, I definitely suggest scouting out your picks now and adding them to your wish list online. Premiere Watch Party Recipe: Cheddar Bacon Ranch Pull Apart Bread

Happy Wednesday loves!

Does anyone else think this is perhaps the longest week ever? The week after a beautifully short week is just always so tough!  It probably didn’t help that Monday night, The Cocooners and I threw a Real Housewives of Orange County watch party, which made it feel like the weekend when the week had only just begun. We will really just take any excuse for us to have a party and try out new recipes with each other and get dressed up (not the case this time around, we were in full comfy mode).


First off, let me just say that I love RHOC. I know, I know, don’t judge me, it’s a very guilty pleasure! I have been watching it since the beginning and I just can’t stop! I think my favorite part is how much their faces change over the years, haha. It is kind of like a car accident you can’t look away from. Don’t worry, since we are Dallas ladies, we will have another night of shenanigans when Real Housewives of Dallas comes back next month too. I am getting ahead of myself now so let me get back on track! We had a delicious spread for ourselves complete with Pina Coladas for National Pina Colada Day. Camille made some amazing Crostinis so make sure to check The Cocooners for the recipe coming soon!

What am I doing?

Hello old friends (& new). It has been quite some time since I made a commitment to be consistent with blogging and for that, I’m not even sorry. Why you ask? I needed a break!! Naturebox: Snack Subscription Box that's actually worth it!


Does anyone else find a subscription, a new product, a new place that they are so excited about they can barely contain themselves? This is absolutely me and that is exactly what I want to do today. Simple Date Night Outfit: Valentine's Day


I hope everyone had a wonderful Valentine’s Day! I enjoyed a relaxing evening at home on the actual night of and made dinner for us. Don’t worry though, I did get to have my night out in celebration with a cute little date night outfit! We had dinner at Benihana – an amazing Hibachi restaurant & enjoyed a movie (John Wick: Chapter 2 – which did not disappoint, action packed start to finish)! When it comes to date night outfits for me, I am more of a comfy casual gal with the exception of my shoes. My shoes are the one piece of my outfit that is always chosen on appearance and not comfort. That’s just the price we pay for fashion ladies! I don’t always know what S is going to have in store for me when he plans a date night out so I have to be prepared for practically anything.

Strawberries & Cream Cookie Bars: Valentine's Day Treat

Happy Valentine’s (Galentine’s) Day to all of you!! I wanted to share a quick recipe that I whipped together last minute for a delicious V-day dessert! I love strawberries, & this recipe is so good. Since we do not typically celebrate/go out for dinner on the actual holiday, I like to cook a meal and dessert for us to enjoy together on the actual holiday. A lot of the time, we will cook and bake our meal together. For this dessert since I was experimenting and relatively had no plan in place, I let him enjoy some quality time with his other love, his PS4 Pro (a new addition to the family – eye roll).
Let’s be honest, I told him I made this for “us” but I really made it for me and decided it would be rude not to share. The idea for this dessert came from my love of all sweets – haha – said every girl ever. This recipe is easy and simple even for an inexperienced baker, perfect for impressing that special somebody – or even taking it along for your Galentine’s night! I want to jump right in to this recipe so you can enjoy your day of love!


Strawberry Cream Cookie Bars
Prep Time: 10 minutes                   Cook Time: 10 minutes                  Yields: about 24 bars

Ingredients:
1 roll of Pillsbury sugar cookie dough
¾ cup of powdered sugar
¾ cup of Cool Whip
6 oz cream cheese
1lb fresh strawberries, diced
10 oz of strawberry glaze

1. In an ungreased 12 x 9 baking sheet/pan, press the cookie dough.  Create a small lip around the sides of the pan. Bake per the directions cookie dough directions. Allow to cool for 10 minutes.
2. Blend cream cheese, powdered sugar, & cool whip until smooth. I used a hand mixer for about 1 minute & that worked perfectly.
3. Spread the cream cheese mixture over the top of the cookie crust, using the entire mixture.
4. Layer the diced strawberries over the cream cheese mixture.
**This step can be done numerous ways. The strawberries can be large slices or diced as I have shown above. Also, the amount of strawberries is up to you. We love strawberries so I used a full pound minus 2 strawberries for the garnish.
5. Spread the glaze over the top using a spatula to evenly distribute.
6. ENJOY with your love!

Basically Shrimp Pasta - Quick & Easy Dinner for Two

I swear this year is flying by! One of the goals that I had for myself this year was to cook more meals at home. I am REALLY good about baking treats, like really good, but cooking meals is a whole other story! Since I am a lover of seafood, I thought I’d make a dish I made for myself quite often while I was single & living in Oklahoma City. Once I moved cities after graduating, I started dating S and like any new relationship, or an explorer of a new city, you go out to eat and try new things together.  The amount of me cooking at home dropped drastically and now it is time to dust off some old recipes and see what he thinks of them!
This recipe is relatively basic & doesn’t require a whole lot of skill! Since it is a basic pasta dish, you can add so many more things such as veggies or spices to give it some pizazz! I’m going to give you the nitty gritty of the recipe but make it your own, that is what cooking is all about! I honestly couldn’t tell you the last time I “followed” a recipe. I typically look at it and think okay, I’m going to add less of that, more of that, and add this instead of that. I encourage you to do the same! That’s enough of me jabbering on, let’s get to the recipe!

Basically Shrimp Pasta <--See what I did there *wink*
Prep Time: 2-3 minutes                 Cook time: 15-20 minutes            
Serves: 2 (Perfect for Valentine’s Day!)
Ingredients:
10 oz pasta (Spaghetti, fettucine, linguini)
10 oz shrimp – peeled, deveined, & tails off (I used “extra small” frozen but you can also use raw)
1 cup sour cream (I use light to cut down on fat)
1.5 tbsp butter (Country Crock is my preference)
1/3 cup grated Parmesan cheese
1 tbsp extra virgin olive oil
1 tsp garlic powder
1 tsp Tony Chachere’s Creole Seasoning
Salt & Pepper
Optional – 1 tbsp gorgonzola cheese

Directions:
1. Since I used frozen shrimp this time, you’ll need to thaw the shrimp. You can do this as an overnight thaw but I don’t plan ahead like that. If you’re like me then place the shrimp in a strainer & run underneath cool water for about 3 minutes, rotating the shrimp to reach all sides, & set aside.
2. Cook the pasta according to the instructions. I used Barilla Spaghetti and boiled it for 11 minutes; I like softer pasta more so than al dente.
3. In a large skillet, heat the olive oil and butter on medium until the butter is melted and mixed well with the oil, about 2 minutes. I started this step about 3 minutes after adding my pasta to the boiling water.
4. Add the shrimp to the oil & butter mixture, cook for about one minute then add Tony Chachere’s. Continue to cook, stirring frequently, for about 4 minutes.
5. Stir in garlic, salt, & pepper. Gradually add the sour cream until blended.
6. Add the parmesan cheese (& gorgonzola if desired – I love the flavor it brings, but gorgonzola is an acquired taste) & stir until everything is well blended. Remove from heat.
7. Serve sauce over pasta and garnish with chives or parsley if desired.
*Serve quickly as the sauce does separate some after sitting.


                If you wanted to do so, it would be quite easy to add some precooked veggies to the mix after step 5.  The next time I make this recipe I will add carrots and broccoli to add some color!  This was a hit last night in our house & S said he would definitely want me to make it again for him, which is a huge win! Time sure flys, let's catch up: Instagram Style

February, really? I cannot believe that January has come and gone. Mean Mr. Punxsutawney Phil predicted 6 more weeks of winter after seeing his shadow yesterday morning, which I’m pretty sure puts him on the naughty list for Christmas this year. I mean yeah, it’s early to be on the naughty list, but that was just rude! Surely I am not the only one ready for summer time, vacations, boats, & relaxation, right? Didn’t think so! Travel plans for 2017 are almost finalized and I’m ready to jump into some fun! Any big travel plans for you this year?
I feel like my last post back in January started out similar to this but I was seriously MIA from the blog last month and I’m very sorry everyone! Sometimes life has other plans & those plans kept me extremely busy with work, play, and everything in between! Since I was so absent recently from the blog, I really wanted to check in with everyone & give them a Basically Joy update. You know the usual stuff i.e. have an IG roundup, let you know what is coming up this month on Basically Joy, & just to say hey girl heeyyyyy!
                A large majority of my time this last month has been spent getting my rear handed to me with the workouts my friend/personal trainer, Delani, designed for me. If you haven’t yet, go check out her YouTube channel or Instagram for some great fitness tips, workouts, etc! In conjunction with Delani’s workouts, I am also finishing up the Dietbet hosted by Brandi Laughlin this upcoming week.  It has been so much fun & I always love the support I get from everyone that joins her Dietbets! My work outs have been going great but I really need to kick my diet into high gear this month – and that is the plan! Round 2 of “Delani Kicks my Butt” starts on Monday & strangely, I am looking forward to it! At the beginning of next month (MY BIRTHDAY MONTH), I am hoping to give my first update/results of how everything is going. I am excited and nervous to see what progress I’ve made with my body since I haven’t checked my body inches since I began the process! Fingers crossed everyone!
               This month on Basically Joy, I am planning on keeping up with all that life entails which also means several upcoming posts!  And what all will I be sharing this month you ask? Excellent question! A little bit of what will be happening this month includes some great recipes, some healthy & some maybe not so much, great deals on fashion, beauty reviews  from my January & February Ipsy glambags, & so much more! Quick & Easy Bacon & Egg Muffins: Breakfast on the Run!

Hey you guuuuyyyysss!! If you don’t get that Goonies reference, I’m not sure that we can be friends – go watch it right now people! Anyway – can you believe that we are practically halfway through January already?! Like what?!?! One of my New Year resolutions, or more so goals, for myself this year was to focus on making my life all around healthier.  That means not only physically but financially, emotionally, and spiritually.  I took the last week or so to get everything in order for me to complete those goals. Big things will be happening for me this year and how do I know that? I am going to MAKE them happen and that’s how I know!

                On the healthy goal of things, I joined a Dietbet that Brandi Laughlin aka “Mama Laughlin” is hosting.  I have been following here for years on IG and she is inspirational, giving, and fun!  For her dietbet, she is giving away so many prizes including a couple of Fitbits!  If you were considering ever doing a Dietbet, the bet she is hosting is definitely the way to go – you can sign up HERE! As I mentioned previously I have begun working with a friend/personal trainer to achieve my fitness goals, but you can’t eat crap and make up for it in the gym! I wanted to share a hearty, yet quick and easy go to recipe of mine.

                First, let me start off by saying that I LOVE BACON. I am not picky about what brand, flavor, or how it is cooked. Bacon is also very paleo friendly, yummy for me! The recipe that I have for you today is a very easy Bacon & Egg Muffin recipe. You can honestly add anything to these that you want but I typically just do the down and dirty basics while occasionally adding cheese for the mister. Adding spinach, peppers, onions, etc will just add to the amazing flavor but I know some picky eaters (like possibly the individual that wrote this) that don’t necessarily like all the extras!

I first made this recipe as a birthday breakfast for my boyfriend.  I wanted bacon and eggs but bacon is such a beast to make and usually causes the entire house to smell “fatty” for the rest of the day, or next two, as well as a mess to clean up with all the grease. I now make these quite often and enjoy them for meals over the following days with just a pop in the microwave! Okay, okay, let’s make these already!

Bacon & Egg Muffins
Prep Time: 5 mins            Cook time: 25 mins          Yields: 11 muffins
Ingredients:
8 eggs
1 tbs Almond/Coconut Milk – optional
1 package Bacon – Hormel Applewood Thick Slices
Salt
Pepper
½ tbs Parsley, finely chopped
Vegetable oil spray

Directions:
1. Preheat oven to 375 degrees.
2. Very lightly spray the inside of the muffin tin with vegetable oil spray, or whatever type you prefer to use. I have made these without any spray and they were just a hair more difficult to remove from the pan.  The oil/fat from the bacon tends to help prevent any sticking.
3. In a mixing bowl, combine the eggs & parsley and whisk together. Add the salt and pepper to taste and mix thoroughly.
4. This is when you could add anything else that you want! Examples: mushrooms, onions, peppers, spinach, sausage, bacon crumbles etc.
5. Next, add the almond milk to the egg mixture and set aside. This step is optional but I love the extra fluffiness that comes when I add a little almond milk to my eggs but you don’t have to add it or you can use dairy milk if you’d like!
6. Line the muffin tin with the bacon strips.  They will overlap some but that is A Okay!
7. Pour the egg mixture into the muffin tins about halfway – 2/3 full. Make sure to evenly distribute your eggs so that you don’t run out before you fill all your tins! Go back and add any extra egg mixture to the muffins after all have been filled.
8. Place on middle rack of the oven for 25-27 minutes. Exactly 25 minutes seems to work perfectly for how I like my bacon but make it your own and adjust the time depending on how soft or crispy you like your bacon to be.
9. Remove from oven and enjoy!



                These are perfect for mornings you are in a rush and have them premade, which is what I did this morning actually! Pop them in the microwave for about 30 seconds to 1 minute and you can enjoy them on the go!
